INGREDIENTS:
1 young Thai coconut
2 cups chopped fresh pineapple
1 banana (frozen works best)
1/2 small avocado
Small handful of spinach (optional)
2 tbsp hemp seeds
3 tsp MCT oil
2 tbsp flaxseed powder
2 tsp pure maple syrup (optional)
1 tsp fresh ginger, minced (optional)
Ice (optional)
INSTRUCTIONS:
Open the Thai Young Coconut with a cleaver and a rubber mallet by making four cuts along the top of the coconut point.
Pour the coconut water directly into a high-speed blender.
Remove the coconut meat from the coconut by using a rubber spatula.
Discard the hard brown bits. Transfer all the coconut meat into the blender with liquid.
Add the remaining ingredients and blend on high speed until frothy and smooth.
If your piña colada smoothie is coming out too thick, add coconut milk or cream until desired consistency.
