Raw Vegan Cookie Dough Recipe YUUUM!


Healthy Raw Cookie Dough? YES! No wheat, no dairy, no butter, no eggs…nothing unhealthy. This is HIGH PROTEIN raw vegan recipe heaven. Easy to make, great for the kids, very filling and guilt-free. 1/2 cup peanut butter or cashew butter or a mixture of both
1/4th cup maple syrup
1 apple, grated on the large tooth, peel on or off (juice included!)
1/2 teaspoon vanilla
pinch of sea salt
Approximately 1 cup almond or cashew flour (Depending on how thick you want dough)
1/2 cup coarsely chopped walnuts
1/2 cup cacau nibs

In a bowl add nut butter. With a spoon or wire whisk, slowly incorporate maple syrup into butter, a little at a time. Add dry ingredients and mix well. To the dry ingredients add grated apple (with any juice that may have collected) and mix using a mash and drag motion to mix in clumps. Stir in the cacao nibs and walnuts. Pick up spoonfuls and press dough firmly in slightly cupped palm of hand with spoon. Sprinkle a plate with some of the nut flour and drop dough onto it. If dough falls apart or sticks to palm, add some more flour to the dough, about a teaspoon at a time. Or just stick spoon in bowl and eat!
This recipe is supposed to be FUN and EASY! You can always add more sweetener, or less. Or more flour for a denser dough, less for a lighter dough. I prefer less flour. Or more nuts and nibs!!!
