Healthy Creamy Vegan Pasta 2 Ways // Tahini Carbonara & Pasta Alla Genovese

I’m not even a pasta person….. Buuuut these recipes 👅

Open For Recipes & Stuff:

Butternut Tahini Carbonara:
– 1/2 cup of soaked cahews
– 1/3 cup of hemp seeds
– 1/4 cup of nooch (nutritional yeast)
– 4-5 TBSP of proper runny tahini
– 2 cups steamed butternut squash (or pumpkin or parsnips)
– 1 tsp sweet smoked paprika
– 1/2 tsp of ground cinnamon
– 2-3 TBSP of tamari (or soy sauce)
– juice of 2 large lemons
– salt & pepper to taste
– 200ml of water to blend
* makes enough for 3-4 servings (depending on appetite lol)
For the stir fried part:
– 2-3 cloves of minced garlic
– 2 cups of sliced mushrooms
– 2-3 large handfuls of spinaaaaach
Add your wholegrain pasta to the mushroom spinach mix. Followed by a generous lake of the cream sauce & apply to face 🙂

Pasta Alla Genovese (my way anyway lol): Makes 3-4 servings.
– 100g of fresh basil
– 500g of diced white potatoes
– green string beans (I used a large packet roughly 300g)
– 1/2 cup of pine nuts (you can use walnuts)
– 2 fat garlic cloves
– juice of 1 lemon
– 1/3 cup of garlic infused olive oil (optional)
– 150ml of veggie broth to thin (as needed)
